Enjoy this favorite and simple winter fruit salad recipe.  In addition to its beauty, this salad packs a punch.  We love this fruit salad for the flavor and because it is chalk full of fiber from the pears and super powered anti-oxidants from the pomegranate.

Pear Pomegranate and Mixed Green Fruit Salad Recipe

3-4 handfuls of organic mixed greens

2 organic pears ripe (you can check this by slightly pressing in on the neck of the pear–if it gives to thumb pressure the pear is ready).

1 organic pomegranate

optional:  gorgonzola cheese, spiced pecans or slivered almonds (don’t worry though – this salad stands up on its own!)


2 T olive oil

2 T white or golden balsamic vinegar

1 T course country mustard

Slice pears, cut pomegranate and pull out seeds (one easy technique is to rinse pomegranate sections under water and work seeds into a bowl of water).  Just be careful — these will stain counter tops and clothing!  Add fruit to mixed greens.  In a smaller cup add olive oil, vinegar, and mustard.  Stir with a fork to emulsify the dressing.  Dress salad as desired, plate, serve, and enjoy!
