Mango Smoothie Recipe

Mangoes will be in season soon this spring! That means their sweet flavor and creamy texture will be available for all your favorite recipes (and for eating plain, of course!). Try this Mango Smoothie Recipe for a simple breakfast or even a filling snack. To make it a bit more creamy and cold, try freezing chunks of bananas in advance. This will make the consistency a bit thicker.

Mango Smoothie Recipe

2 mangoes, peeled, pitted and cut into 1-inch dice
1 cup plain yogurt (see related recipe at left)
1/2 cup milk
1 banana, coarsely chopped
2 Tbsp lemon juice
1 tsp vanilla extract

Place the mangoes in a plastic bag and freeze until firm, at least 1 hour. Just before serving, in a blender, combine the frozen mangoes, yogurt, milk, banana, lemon juice and vanilla. Blend until very smooth. Pour into chilled glasses and serve immediately. Serves 2.
