This week’s box contains apricots. We think that sometimes apricots get a bad rap. They’re not really the “favorite” or the stand-out star of the many varieties of spring fruit in season.
It’s really too bad, because apricots are awesome! They have a light, sweet flavor and rich flesh that makes them a simple pleasure to enjoy. Plus, apricots are incredible versatile for cooking yummy things from breakfast all through the day to dessert. This Grilled Apricots recipe is just one example of how to use your sweet, lovely apricots this week.
2 apricots or peaches, halved and pitted
2 cups plain Greek-style yogurt
4 tbsp chopped toasted walnuts
4 tbsp maple syrup
Heat a grill, stovetop grill pan, or broiler until hot. Cook the fruit until nicely caramelized on the outside, about 5 minutes. The fruit should be softened but still maintain its shape.
Top each fruit half with 1/2 cup yogurt, 1 tablespoon walnuts, and 1 tablespoon maple syrup.
Tip: roast your walnuts in a dry pan over medium heat, stirring occasionally, for about 5 minutes or until fragrant and golden brown.
