Cinnamon Baked Apples
2 apples (Cortland or Honeycrisp apples are ideal)
2 tablespoons raisins or dried cranberries
1 tablespoon honey
1/4 teaspoon ground cinnamon

Core the apples, and pare a 1-inch strip of skin from around the middle of each to prevent splitting. Place the apples in two 10-ounce custard cups. Pack the raisins (or dried cranberries) into the apples.
In a small bowl, mix the honey and cinnamon. Pour the mixture over the raisins in the apples. Top with butter.
Cover tightly and microwave on high until tender when pierced with a fork (about 3-4 minutes).
Bake at 375 degrees F for about 30 minutes.
Serve warm with cream or vanilla ice cream, if desired. Enjoy the sweet and aromatic flavor of your fresh Cinnamon Baked Apples.
